Healthy Pumpkin Oat Cookies

These healthy pumpkin oat cookies are one of my favorite pumpkin recipes because they are sooo easy to make! (gluten & dairy free!) You only need a few ingredients like oats, chocolate, pumpkin etc to make! During the fall season, I always have pumpkin puree on hand. The only problem is not every recipe requires an entire can! I'm usually left with a random amount store away in the refrigerator, The great part about using pumpkin purées that it give such a great texture to whatever you are using it with! Whether you have to open up a new can of pumpkin or use up what you've got hanging in your fridge, you're going to love these easy to make & delicious cookies!




What you need for this Healthy Pumpkin Oat Cookie Recipe:


Ingredients:


+ 2.5 cups rolled oats

+1 cup pure pumpkin puree

+2-3 tbsp pumpkin pie spice or cinnamon

+1/2 dairy free chocolate chips







HOW TO MAKE:


  1. preheat oven to 350 degrees. Mix all ingredients in a bowl form a thick dough.

  2. Use your hands to create 12 cookies. The cookies will not spread or change shape during baking so be sure to create the shape you want before baking.

  3. Place cookies on cookie sheet and bake for 10 minutes

  4. Remove from oven and enjoy warm. Let cool completely before storing.
